I have noticed that ships have 'defence points' and while training crew (say Brock), there is a talent which adds defence points to the ships.

What that defence point exactly is and what's its function ?

I believe for each Defence Point you take 1 less damage per hit.
So if you have 50 Def Points and get hit by a 200 dmg cannon, you only take 150 damage.

This means that defence is more effective against short cooldown weapons, for example (damage and timing not accurate, just a demo):
    - Regular Cannon deals 200 damage every 5 seconds. Losses 50 dmg each shot, after 4 shots/20 seconds the regular cannon has done 200 less damage than it should have due to the defence.
    - A RailGun deals 600 damage every 20 seconds. After firing you deal 550 damage and have only lost 50 damage due to defence.

It also serves to make Carronade completely and utterly useless against Defenders.

Correct, as the Carronade fires a large number of projectiles, each of them will have their damage reduced, so a carronade firing 5 projectiles will lose 250 damage to defence in my above example.
